Cauliflower Parmesan

Recently, I was blessed enough to find myself with three heads of lovely, organic cauliflower in the refrigerator. Having already made riced cauliflower, and mashed cauliflower, I needed something new to try. Enter Cauliflower Parmesan! Dun, dun, dun! I thought it might be gross, but it turned out surprisingly yummy.

Cauliflower offers several health benefits. Not only is it low in calories, but it also contains B vitamins and choline. Choline is essential for learning and memory processes. Cauliflower is high in fiber,which helps you feel full longer. Cauliflower also contains phytonutrients that help protect against cancer. It's basically the unsung hero, that I really despised during my childhood. ;)


1 large head cauliflower, stem trimmed and cut vertically into 1" planks 3 tbsp. avocado oil or olive oil Salt to taste Ground black pepper

Italian bread crumbs (optional)

2 tsp. Italian seasoning (or basil and oregano) 1 1/2 c. marinara sauce 1/4 c. freshly grated Parmesan or vegan cheese substitute 1/4 c. basil leaves, torn if large


Preheat Oven 425 F

1) Arrange cauliflower in a single layer on a rimmed baking sheet and brush both sides with oil. Season with salt, pepper, and Italian seasoning. Dust with a little Italian bread crumbs, if you want to use them. It's not necessary, just a matter of preference.

2) Roast, flipping once, until cauliflower is tender and golden, about 35 minutes. Remove from oven and top each cauliflower steak with marinara sauce. Sprinkle with Parmesan.

3) Bake the cauliflower until cheese is bubbly and golden in spots, about 3 minutes. Garnish with basil leaves and red pepper flakes.

4) Serve with sides or over veggie noodles.

I hope you love these as much as we do!

Note: You will get 3-4 perfect slices of cauliflower steaks out of a large head of cauliflower. The rest falls apart. Arrange the parts that fall apart into circles on the baking sheet, and treat them the same as the intact cauliflower steaks. They turn out well :)
